This AIP Paleo Pot Roast is a great, filling and hearty meal. I made mine with a grass fed chuck roast. Obviously if you have conventional chuck roast that would work too! I like to make this when I am low on prep time but I will be around the house for several hours because it only takes a few minutes to prep everything, and then you can just throw it in the oven for 3-4 hours and forget about it while you do other things. It is easy and quick to make and always fills me up, and did I mention that it is delicious?
