Thick Coconut Yogurt Recipe (AIP Paleo)

The Secret to Thick Coconut Yogurt

Ever since I started AIP I have been on a mission to make a thick coconut yogurt recipe. The first few recipes I tried were very thin and runny. While they tasted like yogurt, they did not have that thick consistency that I missed about dairy based yogurt. One day it hit me that I could use grass fed beef gelatin to not only give a thicker consistency to the yogurt but to also supplement with gelatin which is derived from collagen and has many health benefits . I have used the gelatin before this to make healthy jello snacks. I am stoked about finding a way to incorporate this gut and skin health boosting food into this delicious coconut yogurt recipe. Another plus is that the gelatin gives a protein boost to the yogurt!

How to Avoid Contamination

Another issue I had with some of the coconut yogurt recipes d tried is that occasionally they would become contaminated during the incubation process. Adding the lime juice acidifies the coconut milk making an ideal environment for the acid loving probiotic acidophilus to grow and discourages growth of other microbial contaminants. Ever since I started adding the lime juice, I have had no issues with contamination.

Yogurt Makers are the Best!

I recommend you use a yogurt maker for this recipe. It is basically just an incubator that will keep the yogurt at an optimal temperature for the probiotics to multiply. I have heard of people just leaving the yogurt in a jar at room temperature covered with a paper towel or cloth so you could try this at first but I prefer to use my yogurt maker because it is faster and less likely to become contaminated. This is the one I have. I like it because it comes with little jars to incubate the yogurt in and when you are done, you can just screw the caps on them and place them directly in the refrigerator, it is very easy to use! You can also make this recipe using your instant pot with the yogurt making setting!

About the Ingredients

Oh also, make sure you check the ingredients on the coconut milk you use. Additives like guar gum (which is derived from a legume) are not AIP. I really like Golden Star Coconut Milk because it has no additives.

I like this Aspen Naturals brand of gelatin because it has no taste and it is grass fed but still affordable.

I can’t recommend a brand of probiotic capsules, but anything with some lactobacillus should work.

Coconut Yogurt Recipe

Thick AIP Paleo Coconut Yogurt

  • 2 13.5 oz cans coconut milk
  • Juice of 1 lime
  • 1 tbsp grass fed beef gelatin
  • 3 tbsp water
  • 4 probiotic capsules


  1. Mix 1 tbsp gelatin with 1 tbsp cold water, mix then add 2 tbsp hot water, mix well to dissolve gelatin
  2. Add all ingredients together
  3. Incubate in a yogurt maker for 24 hrs (alternatively you can cover the top of a jar with a paper towel or cloth secured with a rubber band and leave a room temperature for several days.)
  4. Refrigerate until Yogurt thickens
  5. Enjoy plain or add honey, berries, AIP granola or other toppings!
