AIP Paleo Lemon-Basil Tuna Salad

This AIP Paleo Lemon-Basil tuna salad is delicious and healthy. It is great when you need a quick snack or meal. I also think this would make a great dish to bring for a picnic, especially if you use it as a filling for lettuce wraps.

This is so easy to put together last minute. It is one of those things you can usually make with stuff laying around your house. This is definitely one of my go to snacks when I think I have nothing to eat in the house. I usually like to keep a few cans of tuna in my pantry in case I am hungry. I almost always have extra carrots and celery laying around since I cook with them so often. Also, I usually have basil growing in my herb garden. If I am out of lemons I can usually pick one off of my neighbors tree (shhh!) or use a lime.

This recipe is also pretty flexible. You can substitute kale if you are out of spinach or you can throw in whatever veggies are left over in your veggie crisper. The citrus and the basil give it a sort of magic so I wouldn’t leave those out though!

  • 1 can tuna packed in olive oil (or if packed in water add 1/2 tbsp olive oil)
  • Juice of 1 lemon
  • 4 fresh basil leaves, chiffonade
  • 5 spinach leaves, chiffonade
  • ½ small carrot,diced
  • 1 celery stick, diced


  1. Drain the fluid from the canned tuna
  2. If the tuna is packed in water, then add 1/2 a tbsp olive oil. If it is already packed in olive oil then do not add any extra oil.
  3. Add remaining ingredients and mix together
  4. Enjoy!
