This is what I ate for week 8 on the AIP paleo diet. This week I didn’t want to spend much time in the kitchen so I opted for some simple, quick meals. I bought a plain rotisserie chicken from Sprout’s to put on my salad to save some time. And the pot roast requires very little hands on time.

Grass fed pot roast with carrots, mushrooms, onions, celery (recipe to be posted soon)
AIP Blueberry Jello Made with grass fed beef gelatin
Sweet potato fries Yes this is Paula Deen’s recipe. I don’t use her seasoning, but I follow the rest of the directions and make my own seasoning with salt, cinnamon, onion powder and garlic powder.
