AIP Paleo Breakfast: Rosemary Sweet Potato Home Fries
This is my go-to AIP/Paleo sweet potato breakfast recipe. This is a healthy, nightshade free, replacement for hash browns or home fries. It is easy and quick to make and always fills me up, and did I mention that it is delicious?
I usually start by first frying up some bacon and then I cook the sweet potatoes in the left over bacon grease. But you can also substitute coconut oil instead of the bacon grease. I have tried making them both ways and either way they turn out delightful! This is the recipe that I used for breakfast in my week 4 AIP menu.
