AIP Paleo Breakfast Recipe: Mushroom, Bacon, and Spinach Saute

I love this AIP and Paleo breakfast recipe, it was delicious and filling. This recipe is also gluten free, grain free, and dairy free! I felt I was able to start my day right with protein from the bacon and vitamins and fiber from the veggies. After my husband ate it, he said “I like this paleo diet” so I would say it is a success!

Ingredients

  • 12 slices of bacon
  • ¾ onion, diced
  • 12 white button mushrooms, sliced
  • 9oz spinach
  • Salt to taste

Instructions

  1. Preheat oven to 400 F
  2. Place bacon onto a foil lined baking sheet, and bake for 12-20 minutes, checking regularly for desired crispiness.
  3. Pour some of the bacon grease into a large wok (or skillet) and use medium heat
  4. a. But seriously, get a wok if you are meal prepping, they are amazing for prepping large batches.
  5. Add chopped onion to the wok with the bacon grease and cook until translucent
  6. Add the chopped mushroom and more bacon grease if the pan looks dry. Saute until mushrooms get soft and delicious.
  7. Add the spinach to the wok and cook until it wilts.
  8. Chop the Bacon and mix it in with the vegetable
  9. Add salt to taste
